Cracked Wheat Bread

1 2/3 cups water
2/3 cup cracked wheat
2 tablespoons canola oil
1 1/3 tablespoons honey
2 cups whole wheat flour
1 1/4 cups bread flour
1 1/3 teaspoons salt
2 tablespoons vital gluten
2 teaspoons active yeast

Place ingredients in the order given into the machine (stir in the cracked wheat so that the water covers all of it). Add 1/2 hour extra time to the cycle (more for softer cracked wheat, less for crunchier). Use 2 lb., medium cycle (for this cycle, set total time to 3:40 for a 1/2 hour of softening time).
