Bagels

Ingredients:
1 cup water(plus 1 tablespoon)
2 1/2 cups bread flour
1/2 cup whole wheat flour
1 teaspoon salt
2 teaspoons brown sugar
2 teaspoons active dry yeast

Place ingredients in the order given into the bread machine. Start the machine, using the manual (dough) cycle. In the meantime, lightly coat a work surface with cornmeal. When the machine cycle is finished, remove dough and let sit for a few minutes. Cut the dough into 10 equal pieces. Roll into 10-inch long ropes, and form each into a circle, overlapping the ends slightly. Pinch the ends gently to hold together, and place on baking pans sprinkled with cornmeal. Cover and let rise for 30 minutes. 15 minutes before rise time is done, begin to bring 3 quarts of water to a boil. When the water begins to boil, add 1 tablespoon of brown sugar. When the bagels are ready, drop three bagels into the boiling water, and boil for 3 minutes, turning every 45 seconds or so. Remove and place on a wire rack. Preheat the oven to 425 degrees. Continue with the next three bagels, and then the last four. When done, place the bagels on the baking pans (again sprinkled with cornmeal) and bake for 15 minutes. Turn bagels over, and bake for 10 more minutes. Remove and cool on a wire rack.
